Directions

Step 1

Place the chicken breast strips, bell pepper, and onion in the slow cooker. Add chicken broth and 1/4 cup soy sauce, then season with cumin, minced garlic, red pepper flakes, salt, and pepper. Stir well to combine, cover, and cook on Low for 4 1/2 to 5 hours, until the chicken is tender and flavors are fully developed.

Step 2

Remove 1 cup of liquid from the slow cooker and combine it with cornstarch, peanut butter, 1 tablespoon of soy sauce, and lime juice. Mix until the mixture forms a thick sauce. Return the sauce to the slow cooker, stir well, and cover the pot.
