Ingredients

  • 1 large white onion
  • 3/4 pound ground beef round
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 slices American cheese, cut into thirds
  • 1/4 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • 1 tablespoon sweet pickle relish

Directions

Step 1

Slice the onion into 4 thick 1/2-inch rounds, discarding the smaller ends for other recipes. Shape the ground beef into 4 thin patties and season each with kosher salt and freshly ground black pepper.

Step 2

Heat a large skillet over medium-high heat. In batches, place 2 onion slices in the pan and cook without moving them for about 2 minutes. Add 2 patties to the skillet and cook until golden brown, about 2 to 3 minutes. Flip the onion slices and patties, pressing the burgers as they cook, and continue cooking until both are golden brown.

Step 3

lace 2 slices of cheese on top of one onion slice and both burger patties. Stack one burger patty on the cheese-covered onion slice, then top with the second burger patty. Cover with the remaining onion slice and press down. Flip the burger and cook for an additional 1 to 2 minutes. Remove from the pan and set aside. Repeat with the remaining onion slices, burger patties, and cheese.

Step 4

Mix mayonnaise, ketchup, mustard, and pickle relish in a small bowl until well combined. Serve this sauce alongside the burgers.
