Ingredients

  • 1/2 cup chicken broth
  • 3 1/2 tablespoons ranch dressing mix
  • 2 pounds boneless, skinless chicken breasts
  • 1 1/2 pounds yellow baby new potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 ounces cream cheese, cubed at room temperature
  • 1/4 cup ranch dressing
  • 2 cups shredded sharp Cheddar cheese, divided, plus more for garnish
  • • Cooked and crumbled bacon to taste
  • • Thinly sliced scallions for garnish

Combine the chicken broth and ranch dressing mix in the bottom of a 5-quart slow cooker, stirring until well mixed. Arrange the chicken breasts in a single layer on top of the broth mixture, then layer the potatoes evenly over the chicken. Drizzle with olive oil and season with salt and pepper

Cover and cook until the chicken is fully cooked and the potatoes are fork-tender. This takes approximately 2 hours and 45 minutes on HIGH or about 3 hours and 45 minutes on LOW in your slow cooker

Transfer the chicken breasts from the slow cooker to a cutting board and allow them to cool for about 5 minutes. Then, use two forks to shred the chicken into bite-sized pieces

Stir in cream cheese, ranch dressing, and 1 1/2 cups of shredded cheese into the slow cooker. Cover and cook on HIGH for approximately 10 minutes, or until the cheeses melt and the potatoes are tender. Once done, uncover and mix until the cheese is well combined with the other ingredients
