A creamy, minty pie with a chocolate cookie crust—perfect for celebrations or a refreshing dessert!
Ingredients
For the Crust:
- 2 cups Oreo cookie crumbs (or chocolate graham crackers)
- 5 tbsp unsalted butter, melted
For the Filling:
- 1 (8 oz) block cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 ½ cups heavy whipping cream
- 1 (3.4 oz) box instant vanilla pudding mix
- ½ tsp peppermint extract
- 5-6 drops green food coloring (adjust as needed)
- 1 cup vanilla ice cream, softened
- ½ cup mini chocolate chips (optional)
For the Topping:
- 1 cup whipped cream (homemade or store-bought)
- Green sprinkles or chocolate shavings
- Maraschino cherries (optional)
Instructions
1. Make the Crust
- Preheat oven to 350°F (175°C).
- Mix Oreo crumbs with melted butter until combined.
- Press mixture into a 9-inch pie dish and bake for 8-10 minutes. For a no-bake option, chill in the fridge instead. Let cool.
2. Prepare the Filling
- In a large bowl, beat cream cheese until smooth.
- Add sweetened condensed milk, vanilla pudding mix, peppermint extract, and green food coloring. Mix until well combined.
- Stir in softened vanilla ice cream and mix until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold it into the filling mixture.
- Fold in mini chocolate chips (if using).
3. Assemble & Chill
- Pour the filling into the cooled crust and smooth the top.
- Refrigerate for at least 4 hours or overnight until firm.
4. Decorate & Serve
- Top with whipped cream, green sprinkles, and maraschino cherries before serving.
