Shamrock Mint Milkshake Pie Recipe

A creamy, minty pie with a chocolate cookie crust—perfect for celebrations or a refreshing dessert!

Ingredients

For the Crust:

  • 2 cups Oreo cookie crumbs (or chocolate graham crackers)
  • 5 tbsp unsalted butter, melted

For the Filling:

  • 1 (8 oz) block cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 ½ cups heavy whipping cream
  • 1 (3.4 oz) box instant vanilla pudding mix
  • ½ tsp peppermint extract
  • 5-6 drops green food coloring (adjust as needed)
  • 1 cup vanilla ice cream, softened
  • ½ cup mini chocolate chips (optional)

For the Topping:

  • 1 cup whipped cream (homemade or store-bought)
  • Green sprinkles or chocolate shavings
  • Maraschino cherries (optional)

Instructions

1. Make the Crust

  1. Preheat oven to 350°F (175°C).
  2. Mix Oreo crumbs with melted butter until combined.
  3. Press mixture into a 9-inch pie dish and bake for 8-10 minutes. For a no-bake option, chill in the fridge instead. Let cool.

2. Prepare the Filling

  1. In a large bowl, beat cream cheese until smooth.
  2. Add sweetened condensed milk, vanilla pudding mix, peppermint extract, and green food coloring. Mix until well combined.
  3. Stir in softened vanilla ice cream and mix until smooth.
  4. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold it into the filling mixture.
  5. Fold in mini chocolate chips (if using).

3. Assemble & Chill

  1. Pour the filling into the cooled crust and smooth the top.
  2. Refrigerate for at least 4 hours or overnight until firm.

4. Decorate & Serve

  1. Top with whipped cream, green sprinkles, and maraschino cherries before serving.
  2. Slice and enjoy!
